West Texas
Texas Hot Chili
10 red chile pods
2 tsp. fat
2 tsp. salt
1 garlic, pressed
2 lbs stew meat
1/2 cup cooking oil
1/2 cup chopped onions
1 can kidney beans
2 tsp. oregano
4 medium potatoes
Clean chile pods and place in a large pan. Fill with water and boil over medium heat.
Place pods in a blender with a little of the water they were cooked in. Liquify and
keep dividing until all liquid has been processed. Strain and pour into a kettle. Brown
meat in a skillet with fat, garlic, and onion. Combine all ingredients and simmer for 30
minutes or until tender.
